Healthy Coconut Milk Potato Curry

My taste for coconut Milk has started developing living in Malaysia. Here some very popular foods are made of coconut. My urge to try something with this healthy Coconut milk has developed recently. Being very choosy with my taste , I did not want to risk cooking the local food .So, I have borrowed this wonderful recipe of potatoes with coconut from my dearest friend and cousin. She is an Amazing cook, her love for cooking is also one main reason for my inspiration to try new recipes . I am sure every one will want to thank her for this Mouthwatering and delicious Recipe.

Ingredients:

  • Potatoes- 2/3

  • Coconut Milk

  • Green Chilies

  • Garlic Cloves-4/5

  • Bay leaves

  • Cloves

  • Cardamom

  • Cinnamon

  • Yogurt

  • Turmeric

  • Curry leaves

  • Coriander

Method:

  • Boil Potatoes , peel the skin and cut them to cubes and keep them aside

  • Grind green chilies and garlic cloves to  make a paste

  • Heat oil in a pan and add Cumin seeds, Cloves, Cardamon, Bay leaves, curry leaves and turmeric powder and fry them for some time.

  • Add the Green chili and garlic paste and roast

  • Now Add coconut milk and keep stirring continuously  for few minutes so that the milk does not condense

  • Add the boiled potatoes , salt and  stir well

  • Beat yogurt in a bowl and add it to the curry

  • let it boil for sometime , so that the boiled potatoes get the flavor of the spices and cocounut milk.

  • If the mixture gets thick add some water and stir

  • Garnish with coriander leaves and serve hot with Chapati, Rice or even with biryani, or pulao
