In this post i am going to present the simplest way to ladies finger fry curry step by step for beginners. Its one of the highly nutritious and low calorie vegetables that often used prepare curry,  with rice or rotis and also added to sambar in Indian cuisine.

Ladies finger/Okra fry curry also  known as bendakaya vepudu in Telangana region, southern part of india.

Here i am sharing the step by step recipe of  this delicious okra curry . We have different ways to prepare ladies finger and this is the one of the best and simple ways to serve ladies finger curry with rice.

OKRA FRY RECIPE

INGREDIENTS:

  1. 500 grams ladies finger / bendakayalu
  2. Green chilli ( Choped )
  3. One large onion choped
  4. Curry leaves and coriander leaves as sufficient
  5. Garlic cloves crushed or choped as sufficient ( optional )
  6. 1/2 tsp. cumin seeds
  7. 1/2 tsp. mustard seeds
  8. 1 tsp. urad dal / minapa pappu
  9. Pinch of turmeric powder
  10. Coriander powder or garam masala powder as sufficient (optional )
  11. Salt for taste as needed
  12. 2 tbsp Oil as needed ( you can add more oil if needed )

HOW TO PREPARE THE RECIPE STEP BY STEP :

  1. Wash the ladies fingers, onion, Green chilies, Curry leaves and coriander leaves thoroughly and dry ladies fingers with fresh napkin ( if ladies fingers chopped dry they are less sticky )

2.Chop ladies fingers into circle shape as shown in the below picture also chop onions, Green chilies and keep aside

3. Heat a pan with oil as required. Add cumin, mustard, urad dal and fry untill dal turns to golden brown also add curry leaves, garlic cloves, chopped mirchi and fry them untill curry leaves are crispy

Add onions and fry until transulant also add turmeric powder, Coriander powder and salt as shown in bellow picture

Add chopped ladies fingers mix it well and let it fry till stickiness goes away ( Tip : If you add some curd/lemon it helps to get rid of the sticky substance from the vegetable ). Cover and cook till the ladies finger is cooked well and turns to soft. As shown in the bellow picture.

Add chopped coriander leaves and let it cook for more 2 to 3 mins then switch off the stove and the ladies finger fry is ready to serve. It can be served hot with rice, roti or phulka
